Grilled Seafood Skewers And Salad With Yogurt Dressing
- 5-6 tbsp plain yogurt
- 1/2 cup mayonnaise
- 3 tbsp white wine vinegar
- 3 tbsp milk
- Pinch None sugar
- 1 None small cabbage, trimmed and sliced
- 1 None red bell pepper, deseeded and chopped
- 2 None tomatoes, deseeded and diced
- 2 None carrots, trimmed and grated
- 8 None raw king prawns
- 1 3/4 lbs salmon fillet, cut into cubes
- 1-2 tbsp lemon juice
- None None chopped parsley, to serve
- 2 tbsp olive oil
- Mix the yogurt, mayonnaise, vinegar, milk and sugar together and season. Stir in the cabbage, pepper, tomatoes and carrots. Set aside.
- Thread the salmon and prawns onto wooden skewers. Heat a pan with oil then saute the skewers for 5-6 mins, turning. Drizzle with lemon juice. Divide the skewers and salad between 4 plates then serve garnished with parsley.
