Muesli And Apricot Granola Bars
- 10 1/2 tbsp butter, cubed
- 2 tbsp honey
- 1 1/2 cups dried apricots, chopped
- 1 1/4 cups self-rising flour
- 1 1/4 cups untoasted muesli
- 1/2 cup sugar
- 1/2 cup golden raisins
- 2 large eggs, lightly beaten
- Preheat oven to 400u0b0F. Lightly grease and line an 11x7 inch baking pan.
- Melt butter and honey together in a small saucepan over low heat, stirring. Set aside to cool slightly.
- In a large bowl, combine apricots, flour, muesli, sugar, and raisins. Stir in eggs and cooled butter mixture, until combined.
- Spoon mixture into prepared pan, spreading with a spatula to smooth surface.
- Bake 15-20 minutes, until golden. Cool in pan 5 minutes before inverting onto a wire rack to cool completely.
- Cut into squares and store in an airtight container.
