Perfection Salad
- 1 envelope unflavored gelatin
- 1 1/4 c. boiling water
- 1/2 c. sugar
- 1 small grated onion
- 1 small chopped green pepper
- 1 c. chopped celery
- 1/4 c. sliced stuffed olives
- 1/4 c. lemon juice
- 1/4 c. cold water
- 1 tsp. salt
- 1/4 c. vinegar
- 1 c. crisp, shredded cabbage
- 1 or 2 small julienne, cut carrots
- 1/4 c. finely chopped pecans
- Soften gelatin in 1/4 cup water.
- Dissolve in 1 1/4 cups boiling water.
- Add salt, sugar, lemon juice and vinegar.
- Stir to dissolve sugar.
- Let cool.
- Add remaining ingredients.
- Chill in oiled molds or shallow pan.
- I use both red and green cabbages. Also use mayonnaise, sour cream and a little chili sauce mixed well.
