Spicy Curried Eggs

  1. In a medium saucepan, heat olive oil over medium heat. Sweat onion for 3 mins, until soft. Add curry powder and flour. Cook, stirring, for 1 min. Add milk and slowly bring to a boil, whisking, until sauce begins to thicken. Add apple and chutney. Simmer for 3 mins. Add cilantro. Season.
  2. To serve, arrange eggs on steamed rice. Spoon curry sauce over top. Garnish with extra cilantro and crispy shallots.
