Baked Mussels
- 1 lb mussels
- 1/4 cup olive oil
- 1 clove garlic, crushed
- 2 tbsp finely chopped fresh flat-leaf parsley
- 1/2 cup stale breadcrumbs
- 1 medium tomato, seeded and finely chopped
- Scrub the mussels and remove the beards. Heat 3/4 cup water in large saucepan on high heat. Add the mussels and cook, covered, for about 3 mins or until shells the open (discard any that do not). Drain and discard the liquid.
- Loosen the mussels and remove from the shell. Discard one half of each shell and reserve the remaining half. Combine the mussel meat, oil, garlic, parsley and breadcrumbs in a medium bowl and mix well. Cover and refrigerate for 30 mins.
- Preheat the oven to 400u0b0F.
- Place one mussel in each shell and place on a baking pan. Combine the tomato with the breadcrumb mixture and spoon over the mussels. Bake for about 5 mins or until the breadcrumbs are lightly browned.
