Tex Mex Pasta Salad

  1. In a small bowl, whisk together 1/2 tsp lime zest, 1 tbsp lime juice, Italian dressing, cilantro, garlic, mustard and cumin. Season.
  2. Meanwhile, cook pasta in boiling salted water until al dente. Let cool then toss with 1/2 the vinaigrette mixture. In a large serving bowl, layer lettuce and pasta. Sprinkle with black beans, corn, tomatoes, olives, onions, cheese and jalapeno. Arrange tortilla chips around the bowl. Serve with remaining dressing.
