Tex Mex Pasta Salad
- 1 None lime, zested and juiced
- 3/4 cup Italian dressing
- 1/4 cup chopped fresh cilantro
- 1 tbsp minced garlic
- 2 tsp Dijon mustard
- 2 tsp honey mustard
- 1/2 tsp ground cumin
- 8 oz spiral pasta
- 4 cups chopped romaine lettuce
- 1 cup cooked black beans
- 1 cup cooked corn kernels
- 2 None large tomatoes, chopped
- 1/2 cup sliced black olives
- 1/2 cup chopped red onion
- 1/2 cup finely shredded Cheddar or Monterey Jack cheese
- 1 None small jalapeno pepper, sliced into rounds
- 1 bag tortilla chips
- In a small bowl, whisk together 1/2 tsp lime zest, 1 tbsp lime juice, Italian dressing, cilantro, garlic, mustard and cumin. Season.
- Meanwhile, cook pasta in boiling salted water until al dente. Let cool then toss with 1/2 the vinaigrette mixture. In a large serving bowl, layer lettuce and pasta. Sprinkle with black beans, corn, tomatoes, olives, onions, cheese and jalapeno. Arrange tortilla chips around the bowl. Serve with remaining dressing.
