Strawberry French Macarons

  1. Preheat oven to 300u0b0F. Grease and line 2-3 baking trays with parchment paper.
  2. Whip egg whites to soft peaks. Add sugar and a few drops of food coloring, beating until sugar dissolves. Fold in 1 1/4 cups powdered sugar, ground almonds and strawberry puree. Transfer to a piping bag fitted with a 1/2 inch plain tip.
  3. Pipe 1 1/2 inch rounds about 1 inch apart onto prepared trays. Tap trays on a table so macarons spread slightly. Let stand for 30 mins.
  4. Bake macarons for about 20 mins. Let cool on trays.
  5. Sandwich macarons together with jam. Dust with remaining powdered sugar.
