Pepper Steaks With Tomato Gratin
- 1 None onion, finely chopped
- 1 clove garlic, chopped
- 3 None zucchinis, sliced, blanched
- 5 None tomatoes, sliced
- 2 oz mozzarella cheese, grated
- 4 None steaks, 1/4 lb each
- 2 tbsp cracked black pepper
- None None salad, to serve
- Preheat oven to 450u0b0F. Lightly spray an 8 x 8 inch shallow ovenproof dish with cooking oil.
- For the tomato gratin, spray a large frying pan with cooking oil and heat on medium. Cook onion and garlic 3 mins, stirring, until onion is soft. Layer zucchini and tomatoes in prepared dish and season. Sprinkle onion mixture and cheese on top. Bake 15 mins. Broil 1-2 mins, until top is golden.
- Meanwhile, coat one side of steaks with pepper. Heat a griddle pan on high and cook 4 mins each side, or as desired. Serve with tomato gratin and salad.
