Beef Salad With Blue Cheese Dressing

  1. To make the blue cheese dressing, whisk together olive oil, garlic, orange juice and blue cheese. Set aside.
  2. Preheat oven to 425u0b0F. Arrange potatoes, in a single layer, in a large shallow baking dish and drizzle with oil. Roast for 20 mins, or until golden brown and tender.
  3. Oil a grill pan and place over high heat. Sear beef until browned on both sides and cooked to your liking. Cover and let rest for 5 mins. Slice thinly
  4. Meanwhile, boil, steam or microwave green beans until just tender. Drain.
  5. Combine beef, green beans and potatoes in a large serving bowl. Add tomatoes and arugula and drizzle with dressing. Toss gently to combine. Serve immediately.
