Blackberry, Pear, And Ginger Cake
- 2 None small, firm, ripe pears, peeled, cored and diced
- 1 tsp lemon juice
- 11 tbsp butter, softened
- 2/3 cup light brown sugar
- 3 None eggs
- 1 1/4 cup self-raising flour
- 1/2 inch piece fresh root ginger, peeled and finely chopped
- 5 oz blackberries
- None None powdered sugar, for dusting
- Preheat the oven to 350u0b0F. Grease a 8 inch cake pan and sprinkle with flour. In a bowl, mix the pears and lemon juice.
- Beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, adding 1 tbsp flour with the last egg. Sift the remaining flour into the bowl and fold in. Fold in the pears and ginger. Spoon batter into the pan and smooth out. Add the blackberries and press in slightly.
- Bake for 50-60 mins, until a skewer comes out clean. Allow to cool in the pan for 5 mins, then turn out on to a wire rack and allow to cool completely. Dust with powdered sugar.
