Turkey With Stilton And Walnuts
- 4 None turkey breast fillets (6 oz each)
- 4 oz Stilton cheese, crumbled
- 2 tbsp chopped walnuts
- 2 tsp fresh chopped thyme
- 8 slices prosciutto
- 2-3 tbsp olive oil
- None None FOR THE GRAVY
- 2/3 cup red wine
- 2/3 cup red currant jelly
- 3 tbsp port
- 1 tbsp juniper berries
- 1 tbsp fresh thyme leaves
- Make a deep horizontal cut along each turkey fillet to form a pocket. Mix the Stilton cheese, walnuts and thyme; season with freshly ground black pepper. Fill turkey fillets with stuffing. Wrap 2 slices of prosciutto around each turkey fillet.
- Heat the oil in a large skillet on medium heat. Cook the turkey fillets for 15-20 mins, turning occasionally, until just cooked through.
- Meanwhile, for the gravy, add all the ingredients to the skillet. Stir until well blended. Reduce heat to low; simmer for 8-10 mins, spooning the gravy over the turkey.
