Turkey With Stilton And Walnuts

  1. Make a deep horizontal cut along each turkey fillet to form a pocket. Mix the Stilton cheese, walnuts and thyme; season with freshly ground black pepper. Fill turkey fillets with stuffing. Wrap 2 slices of prosciutto around each turkey fillet.
  2. Heat the oil in a large skillet on medium heat. Cook the turkey fillets for 15-20 mins, turning occasionally, until just cooked through.
  3. Meanwhile, for the gravy, add all the ingredients to the skillet. Stir until well blended. Reduce heat to low; simmer for 8-10 mins, spooning the gravy over the turkey.
