Banana Coconut Fritters
- 3/4 cup flour
- 1/2 cup flaked coconut
- 1 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 None egg, separated
- 1/2 None lemon, peel finely grated and lemon juiced
- None None Vegetable oil, for deep frying
- 2 None bananas, peeled, sliced diagonally into 3/4 inch pieces
- None None Powdered sugar, to dust
- None None Chocolate sauce and whipped cream, to serve
- Sift flour into a large bowl. Stir in coconut, sugar, cinnamon. Make a well in the center of the dry ingredients. Mix 1/3 cup water, egg yolk and lemon peel and juice in a small bowl. Pour into the well and stir until batter is smooth.
- Beat egg white in a clean bowl until soft peaks form. Fold into batter.
- Heat oil in a saucepan on medium heat. Dip banana pieces into batter, draining off excess. Deep-fry in 3 batches for 1-2 mins, until golden. Drain fritters on paper towels.
- Dust with powdered sugar. Drizzle with chocolate sauce and serve with whipped cream, if desired.
