Irish Stew
- 500 g mutton or lamb, cut into cubes
- 250 g onions, peeled and cut into wedges
- 1 clove garlic, peeled and finely chopped
- 3 tbsp oil
- 3/4 litre instant stock
- 1 head cabbage (about 1 kg), quartered, and stalk removed
- 100 g celery, washed and chopped
- 250 g carrots, cut into slices
- 400 g potatoes, cut into slices
- None None white pepper
- 1/2 tsp caraway seeds
- 1 bunch parsley, washed and chopped finely
- Heat the oil in a large frying pan and brown the meat on all sides. Add the onions and garlic and saute with the meat. Add the stock and cook for 2 hours. In the meantime, wash the cabbage and cut into strips.
- About 30 minutes before the end of cooking, add the vegetables, cumin, salt and pepper. Before serving, season to taste and garnish with parsley.
