Chocolate And Raisin Squares
- 1 1/2 cups rolled oats
- 1 cup flour, sifted
- 1 cup sugar
- 1 cup flaked coconut
- 8 tbsp (1 stick) butter, chopped
- 1 tbsp golden syrup or maple syrup
- 1 tsp baking soda
- 1/2 cup chopped walnuts
- 1/3 cup chopped raisins
- 7 oz semi-sweet chocolate, melted
- Preheat the oven to 325u0b0F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.
- Combine the oats, flour, sugar and coconut in a large bowl.
- Place the butter and golden syrup in a small saucepan. Stir on low heat for 2-3 mins until melted.
- Combine 2 tbsp boiling water and baking soda in a small bowl. Stir into the butter mixture. Pour into the dry ingredients. Mix in the walnuts and raisins. Press the mixture very firmly into the prepared pan using a fork.
- Bake for 25-30 mins until golden. Cool in the pan.
- Spread the chocolate over the top. Refrigerate until firm. Using a hot knife, cut into squares. Store in an airtight container.
