Mini Spring Roll Salad

  1. Preheat the oven to 400u0b0F. Place the spring roll on a baking tray and cook for 15 minutes (or according to pack instructions) until crisp and piping hot.
  2. Meanwhile, whisk together the oil, vinegar and soy sauce and season to taste with freshly ground black pepper. Place the salad leaves and onion in a bowl and add the dressing, tossing gently to coat. Divide the salad and spring rolls between 4 serving plates. Garnish with whole chives and serve with the sweet chilli dipping sauce in small bowls.
