Potato And Vegetable Salad With Herb Dressing

  1. Cook the potatoes in salted boiling water for 15-20 mins, until cooked through. Drain, allow to cool, and slice.
  2. Cook the beans and cauliflower florets in salted boiling water for 7-8 mins until just tender. Drain, rinse in cold water and allow to cool completely.
  3. Place the cooled potatoes in a bowl with the beans and cauliflower. Add lettuce and pepper and toss to mix.
  4. For the dressing: place the yogurt and mayonnaise in a bowl, add the chopped herbs, season to taste with and freshly ground black pepper and mix well.
  5. Spoon dressing over the salad, garnish with the extra basil leaves and serve.
