Potato And Vegetable Salad With Herb Dressing
- 1 lb small potatoes, peeled and halved
- 1/2 lb green beans, trimmed and cut into pieces
- 1 small cauliflower, cut into florets
- 1 head lettuce, torn into bite-size pieces
- 1 None red pepper, deseeded and roughly chopped
- 1 2/3 cups plain yogurt
- 3 tbsp mayonnaise
- 2 tsp basil, chopped, plus extra leaves to garnish
- 2 tsp chives, chopped
- 2 tsp parsley, chopped
- Cook the potatoes in salted boiling water for 15-20 mins, until cooked through. Drain, allow to cool, and slice.
- Cook the beans and cauliflower florets in salted boiling water for 7-8 mins until just tender. Drain, rinse in cold water and allow to cool completely.
- Place the cooled potatoes in a bowl with the beans and cauliflower. Add lettuce and pepper and toss to mix.
- For the dressing: place the yogurt and mayonnaise in a bowl, add the chopped herbs, season to taste with and freshly ground black pepper and mix well.
- Spoon dressing over the salad, garnish with the extra basil leaves and serve.
