Lamb Meatballs With Feta Cheese Sauce
- 10.5 oz ground lamb
- 1 None small onion, finely chopped
- 1/4 cup dried breadcrumbs
- 2 tbsp pistachios, toasted, chopped
- 1 None lemon, zested
- 1 tsp dried oregano
- 1 None egg, lightly beaten
- None None FOR THE FETA CHEESE SAUCE
- 1/2 cup milk
- 2 oz cream cheese, cubed
- 1/3 cup lemon juice
- 3.5 oz feta cheese, crumbled
- 1 tbsp fresh mint leaves, chopped, to serve
- Preheat oven to 400u0b0F. Line a baking tray with parchment paper.
- Combine ground lamb, onion, breadcrumbs, pistachios, lemon zest, oregano and egg. Roll into meatballs. Place on prepared tray and chill for 20 mins. Lightly coat meatballs with oil. Bake for 15 mins, or until cooked through.
- Meanwhile, to make the feta cheese sauce, combine all ingredients in a medium saucepan over medium-high heat. Heat, stirring, for 5 mins, or until sauce thickens. Let cool then transfer to a serving bowl and sprinkle with mint.
- Serve meatballs with feta cheese sauce.
