New Year'S Day Bean Soup

  1. Wash beans well and place in a large kettle.
  2. Cover with water, add 2 tablespoons salt and soak overnight.
  3. Drain well and add 2 quarts water and ham hocks.
  4. Bring to a boil and simmer slowly 2 1/2 to 3 hours.
  5. Then add remaining ingredients.
  6. Simmer 1/2 hour longer.
  7. Freezes well.
