Lemon Cheesecakes
- 3/4 cup graham crackers crumbs
- 3 1/2 tbsp butter, melted
- 18 oz cream cheese, softened
- 2 tsp finely grated lemon zest
- 1/2 cup granulated sugar
- 2 None large eggs
- 1 cup apricot jam
- 2 tbsp brandy
- Preheat oven to 300u0b0F. Line a 12-cup muffin pan with paper liners.
- Combine graham crackers crumbs and butter. Distribute between paper liners and press down firmly. Chill for 30 mins.
- Beat cream cheese, lemon zest and sugar until smooth. Beat in eggs. Distribute between paper liners and bake for 25 mins, or until just set in center. Let cool for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the glaze, stir jam and brandy over low heat then strain. Pour evenly over cheesecakes then chill for 2 hours, or until set.
