Lemon Cheesecakes

  1. Preheat oven to 300u0b0F. Line a 12-cup muffin pan with paper liners.
  2. Combine graham crackers crumbs and butter. Distribute between paper liners and press down firmly. Chill for 30 mins.
  3. Beat cream cheese, lemon zest and sugar until smooth. Beat in eggs. Distribute between paper liners and bake for 25 mins, or until just set in center. Let cool for 5 mins then transfer to a wire rack to cool completely.
  4. Meanwhile, to make the glaze, stir jam and brandy over low heat then strain. Pour evenly over cheesecakes then chill for 2 hours, or until set.
