Peanut Butter Cookies
- 9 tbsp butter, chopped, at room temperature
- 1 cup light brown sugar
- 1/2 cup crunchy peanut butter
- 1 None egg, beaten
- 1 cup rice flour
- 1 tsp baking powder
- 2 oz finely chopped chocolate
- 1/4 cup chopped peanuts
- Preheat oven to 350u0b0F. Line two baking trays with baking paper.
- In a bowl, using an electric mixer, beat butter and sugar together until creamy. Beat in peanut butter and the egg.
- Sift rice flour and baking powder together. Mix into creamed mixture until well combined.
- Spoon tablespoonfuls of the mixture into balls and arrange on trays, allowing room for spreading. Bake for 8 minutes.
- In a bowl, combine chocolate and peanuts. Sprinkle evenly over each cookie. Bake for a further 2-3 minutes, until cookies are golden. Cool on trays. Store in an airtight container.
