Salmon With Horseradish And Chive Butter
- 6 None baby potatoes
- 6 tbsp butter, 3 tbsp melted and cooled
- 2 tsp horseradish cream
- 2 tsp lemon zest
- 2 tsp lemon juice
- 2 tbsp chopped fresh chives
- 1 None small red pepper, cut into thin strips
- 2 None salmon fillets, skin-on
- None None steamed baby green beans, to serve
- Place potatoes in a medium saucepan. Cover with cold water and bring to a boil. Boil for 8-10 mins, or until just tender. Drain and let cool. Cut into 3/4 inch thick slices.
- Whisk together melted butter, horseradish cream, lemon zest and lemon juice in a small bowl. Stir in 1/2 the chives.
- Melt remaining butter in a large frying pan over medium heat. Add potatoes and pepper. Cook for 5-6 mins. Stir in remaining chives. Transfer to a heatproof bowl and cover to keep warm.
- Add salmon to pan, skin-side down, and cook for 3 mins. Flip over and cook for another 3 mins for medium, or until cooked to your liking. Place salmon, potato mixture and green beans in serving dishes. Serve drizzled with chive butter.
