Fruity Almond Ring

  1. Combine raisins and orange juice in large bowl. Cover; let stand overnight.
  2. Preheat the oven to 300u0b0F. Grease a deep 8-inch ring cake pan; line bottom with parchment paper.
  3. Beat butter, orange peel and sugars in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well between additions. (Mixture may curdle at this point but will come together later.)
  4. Using a wooden spoon, stir in raisin mixture then flours. Spoon into prepared pan; sprinkle evenly with almonds.
  5. Bake for 1 1/2 hours, or until a skewer inserted into center comes out clean. Cover loosely with foil during baking if it starts to overbrown. Give the cake quarter turns several times during baking if browning unevenly.
  6. Heat marmalade in small saucepan without boiling; strain. Brush hot cake with hot marmalade. Cool in pan on a wire rack.
