Fruity Almond Ring
- 2 cups golden raisins
- 3/4 cup orange juice
- 12 tbsp (1 1/2 sticks) butter, softened
- 2 tsp finely grated orange peel
- 1/3 cup demerara sugar
- 1/3 cup granulated sugar
- 3 None eggs
- 2/3 cup flour
- 1/3 cup self-rising flour
- 1 cup whole blanched almonds
- 1/3 cup orange marmalade
- Combine raisins and orange juice in large bowl. Cover; let stand overnight.
- Preheat the oven to 300u0b0F. Grease a deep 8-inch ring cake pan; line bottom with parchment paper.
- Beat butter, orange peel and sugars in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well between additions. (Mixture may curdle at this point but will come together later.)
- Using a wooden spoon, stir in raisin mixture then flours. Spoon into prepared pan; sprinkle evenly with almonds.
- Bake for 1 1/2 hours, or until a skewer inserted into center comes out clean. Cover loosely with foil during baking if it starts to overbrown. Give the cake quarter turns several times during baking if browning unevenly.
- Heat marmalade in small saucepan without boiling; strain. Brush hot cake with hot marmalade. Cool in pan on a wire rack.
