Pork Chops With Mushroom And Leek Gratin

  1. Preheat the oven to 350u0b0F. Heat 2 tbsp oil in a large frying pan and sear the pork chops on both sides, working in batches if necessary. Season then lay them next to each other in a shallow baking dish.
  2. Heat the remaining oil, fry the bacon until crisp then remove from the pan. Saute the mushrooms in the bacon fat, season, then add the flour and continue to cook. Add the stock and cream and bring to a boil, stirring. Add the leek, bacon and dried marjoram and simmer, covered, for about 5 mins, stirring occasionally. Season to taste then pour over the pork chops.
  3. Cover with foil and bake for about 1 hour. Remove the foil and continue to bake for another 45 mins, basting regularly. Serve garnished with fresh marjoram.
