Apple And Pine Nut Cake
- 150 g plain flour
- 1 tsp baking powder
- 110 g caster sugar
- 2 large eggs, lightly beaten
- 125 g unsalted butter, melted
- 4 None medium unpeeled golden delicious apples, cored, thinly sliced
- 120 g pine nuts
- 1 None lemon, grated rind
- None None icing sugar, to dust
- None None mascarpone, to serve
- Preheat oven to 180u0b0C./ 160u0b0C. fan. Gas mark 4. Lightly grease a 20cm springform pan and dust with flour.
- Sift flour and baking powder together into a bowl. Stir in sugar. Make a well in centre and add eggs and melted butter. Stir, gradually incorporating flour, to make a thick batter.
- Fold in 1/4 of the sliced apple, and 1/2 of the pine nuts and lemon rind. Spoon into prepared pan. Arrange remaining sliced apple on top of cake and sprinkle with remaining pine nuts. Bake for 1 hour 5 minutes, covering with brown paper bag or foil if cake is browning too much, until a skewer inserted comes out clean.
- Cool cake in pan for 10 minutes before transferring to a serving platter to cool completely. Dust with icing sugar and serve with mascarpone.
