Low Fat New York Cheesecake
- 3 oz graham crackers, crushed
- 4 tbsp low-fat spread, melted
- 1 lb low-fat cream cheese, at room temperature
- 2/3 cup evaporated milk
- 1/3 cup granulated sugar
- 1 None lemon, zested and juiced
- 2 None eggs
- 1/2 lb strawberries, mashed
- Preheat oven to 300u0b0F. Lightly grease and line an 8 inch springform pan with foil, leaving a 3/4 inch overhang.
- Combine graham cracker crumbs and spread. Press firmly into base of prepared pan. Chill for 30 mins.
- Meanwhile, beat cream cheese until smooth. Add evaporated milk, sugar, lemon zest and lemon juice. Beat in eggs, 1 at a time, until combined. Transfer to prepared pan and bake for 50-60 mins, until just set but slightly wobbly in the center. Turn oven off. Let cheesecake cool in oven with door ajar. Chill overnight.
- Top with mashed strawberries. Cut into wedges to serve.
