Strawberry And White Chocolate Cupcakes

  1. Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
  2. Beat butter and sugar in a large bowl with an electric mixer until pale and creamy. Add eggs, one at a time, beating well after each addition.
  3. Beat in flour alternately with milk. Fold in chocolate and 1 cup of the strawberries. Spoon evenly into muffin cups, filling each 2/3 full.
  4. Bake 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
  5. For the frosting, beat cream cheese and powdered sugar in a medium bowl with electric mixer until smooth. Beat in strawberry jam. Transfer to a piping bag fitted with a plain tip. Pipe onto cooled cupcakes and decorate with remaining 1/2 cup strawberries.
