Cheese Scones
- 2 cups self-rising flour
- 1/2 tsp salt
- 2 tbsp cold butter, chopped
- 1 None egg
- 1/2 cup milk
- 1/2 cup finely grated aged Cheddar cheese
- 2 tbsp butter, melted
- 1/2 tsp ground mustard powder
- None None Pinch of cayenne pepper
- Preheat the oven to 425u0b0F. Grease a baking pan.
- Sift the flour and salt in a medium bowl. Rub in the chopped butter with your fingertips. Whisk the egg and milk and pour over the dry ingredients. Use a spatula to cut the milk mixture through the flour mixture to make a soft dough.
- Turn the dough onto a floured work surface and knead lightly, folding over once. Roll out gently until 1-inch thick. Cut into rounds with 1 1/2-inch round cutter. Place the rounds on the prepared pan so they are just touching. Re-roll the scraps and cut into rounds.
- Stir the cheese, melted butter, mustard and cayenne pepper in small saucepan on low heat until the cheese starts to melt. Spoon the cheese mixture over the scones.
- Bake for 15 mins or until the tops are golden and sound hollow when tapped. Place, top-side up, on a wire rack to cool.
