Spicy Lamb, Potato And Pea Samosas
- 1 tbsp vegetable oil
- 1 None small onion, finely chopped
- 2 tbsp curry paste
- 1 lb potatoes, peeled, diced
- 1 cup chicken stock
- 10.5 oz cold cooked lamb, chopped
- 5 oz frozen peas, thawed
- 4 sheets frozen pie dough, thawed
- 2 tbsp milk
- 2 None tomatoes, chopped
- 1 None cucumber, chopped
- 2 tbsp roughly chopped fresh cilantro leaves
- None None Greek yogurt, to serve
- Preheat oven to 400u0b0F.
- Heat oil in a frying pan over medium heat. Cook onion for 5 mins. Stir in curry paste and cook for 1 min. Add potatoes and stock. Cover and bring to a boil. Cook for 5 mins. Uncover and cook for another 5 mins. Stir in lamb and peas. Let cool.
- Cut a 9 1/2 inch round from each sheet of pie dough. Cut each round in 1/2 then top with filling. Fold over, pressing edges together to seal. Place on an oiled baking tray and pierce holes in the top. Brush with milk. Bake for 20 mins, or until golden brown.
- Meanwhile, combine tomatoes, cucumber and cilantro. Serve samosas with salsa and yogurt.
