Lobster Mornay
- 2 cups milk
- 1 None small onion, quartered
- 1 None bay leaf
- 2 None whole cloves
- 4 1/2 tbsp butter
- 1/4 cup all-purpose flour
- 2 oz Parmesan cheese, grated
- 2 tsp Dijon mustard
- 2 None cooked lobsters, halved, meat chopped into large chunks, shells reserved
- 1/4 cup fresh breadcrumbs
- None None chopped fresh parsley, for garnish
- None None lemon wedges, to serve
- In a medium saucepan, combine milk, onion, bay leaf and cloves. Bring almost to a boil. Remove from heat and set aside for 5 mins to infuse. Strain through a fine-mesh sieve.
- Meanwhile, melt butter in a medium saucepan over low heat. Add flour and cook, stirring, for 1 min. Gradually whisk in strained milk, stirring until smooth. Cook, stirring, for 3-4 mins, until mixture boils and thickens. Simmer for 3 mins. Remove from heat and stir in 1.5 oz Parmesan and mustard. Season to taste. Add lobster meat.
- Preheat broiler. Line a grill pan with foil. Place shells on grill pan. Spoon lobster and sauce into shells. Sprinkle with breadcrumbs and remaining Parmesan. Broil for 4-5 mins, until lightly golden and bubbling. Sprinkle with chopped parsley and serve with lemon wedges.
