Ole Time Hush Puppies
- 2 c. yellow cornmeal
- 1 c. plain flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 c. finely chopped parsley
- 1 tsp. seasoned salt or regular salt
- 1/2 tsp. garlic salt
- ground cayenne pepper to taste
- 2 eggs, beaten
- 3/4 to 1 c. buttermilk
- 1 c. green onions, finely chopped
- 2 Tbsp. hot cooking oil or bacon drippings
- 1 1/2 to 2 c. deep fat (cooking oil) for frying
- Heat the 1 1/2 to 2 cups cooking oil in a deep-sided skillet or heavy-gauge pot.
- (Heavy cast-iron pots and pans are best for this type of frying.)
- Combine all dry ingredients together in a large bowl.
- Add the eggs, buttermilk and onions.
- Stir well until you have a coarse batter.
- Add the 2 tablespoons of bacon drippings (or oil) and blend well with the other ingredients.
