Beef Stew With Coconut Milk
- 2-3 tbsp oil
- 800 g braising steak, cut into strips
- 100 g spring onions, sliced
- 3 cloves garlic, peeled and finely chopped
- 1 cm piece fresh root ginger, peeled and grated
- 1 None red pepper, deseeded and diced
- 1/4 tsp dried chilli flakes
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- 400 ml can coconut milk
- 150 ml soy sauce
- 250 ml vegetable stock
- 1/2 tbsp cornflour, mixed with 4 tbsp water until smooth
- 6 sprigs fresh coriander, leaves stripped from stems
- Heat the oil in a Dutch oven on high heat. Cook the beef, turning, until browned. Add the onions, garlic, ginger and pepper and cook for 2 mins. Stir in the red pepper flakes, cumin and cinnamon.
- Add the coconut milk, soy sauce and stock and bring to a boil. Reduce heat to low; cover and simmer for 1 1/4 - 1 1/2 hours, until the beef is tender. Stir in the cornstarch mixture. Bring to a boil and simmer for 2 mins. Season with salt and black pepper and sprinkle with cilantro.
