Prawn Kebabs

  1. Combine coconut milk, lemongrass, fish sauce, lime juice, sugar and chili. Add prawns and toss to coat. Cover and chill for 30 mins.
  2. Heat a large, oiled frying pan over high heat. Thread prawns onto soaked skewers, reserving marinade. Cook prawn skewers for 2 mins per side, until cooked through. Set aside.
  3. Simmer reserved marinade for 5-10 mins, until sauce reduces and thickens. Return prawns to pan and toss to coat. Serve sprinkled with cilantro leaves.
