Chicken With Tomato And Bean Stew
- 2 tbsp oil
- 1 None onion, chopped
- 2 cloves garlic, crushed
- 2 None tomatoes, diced
- 1/4 cup tarragon leaves
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 lb chicken tenders
- None None Steamed baby potatoes, to serve
- Heat 1 tbsp of the oil in a medium saucepan on medium heat. Cook the onion for 5 mins, until soft. Add the garlic, tomato, tarragon and 1/2 cup water. Simmer for 5 mins, until the tomato softens.
- Add the cannellini beans and simmer for 1 min, until heated through. Season to taste.
- Meanwhile, heat the remaining 1 tbsp oil in a nonstick skillet on medium heat. Cook the chicken for 3 mins each side, until browned and cooked through.
- Spoon the tomato and bean mixture onto serving plates and top with the chicken. Serve with steamed baby potatoes.
