Zesty Chicken With Chickpea And Goat Cheese Salad

  1. Heat the vegetable oil in a frying pan, add the chicken and fry for 10-12 mins, turning occasionally. Remove from the pan and allow to rest for two mins, then cut into slices.
  2. Place the chickpeas in a bowl with the tomatoes and mix well. Set aside.
  3. For the dressing: mix the onion, cilantro, lime juice, sugar, chili and olive oil. Season to taste. Add half the dressing to the chickpea mixture and top with goat cheese.
  4. Drizzle the remaining dressing over the chicken. Serve with the chickpea salad and garnish with lime wedges.
