Oven Roasted Barbecue Spareribs

  1. Bring a large pan of salted water to a boil then add the ribs, making sure they are covered with water. Cover and simmer gently for 1 1/2 hours, topping up the water if necessary.
  2. For the barbecue sauce, heat the butter in a large pan, add the onion, ginger and garlic and fry for 5 mins. Sprinkle with the sugar and cook gently for a further 5-10 mins until caramelized. Stir in the vinegar, ketchup and Worcestershire sauce along with the cinnamon and star anise. Simmer gently for 15 min, stirring occasionally. Remove the cinnamon sticks and star anise.
  3. Preheat the oven to 325u0b0F. Remove the ribs from the cooking liquid and place on a large baking sheet lined with parchment paper. Spoon over 3/4 of the barbecue sauce and rub into both sides of the ribs.
  4. Roast in the oven for 40 mins, basting with a little more of the sauce after 25 mins. Cut the ribs into 3-4 bone pieces and serve with any remaining sauce.
