Portuguese Potatoes
- 1 1/3 lbs potatoes, peeled and chopped coarsely
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1 large onion, chopped coarsely
- 4 medium tomatoes, chopped coarsely
- 2 tsp sweet paprika
- 2 tsp finely chopped fresh thyme
- 1/2 cup chicken stock
- 1 dash piri-piri sauce
- 1 tbsp coarsely chopped fresh flat-leaf parsley
- Preheat the oven to 400u0b0F. Toss potatoes and 1 tbsp of the oil in medium shallow baking dish. Roast, uncovered, for 30 mins, or until browned lightly.
- Meanwhile, heat remaining 1 tbsp oil in large skillet on medium-high heat. Cook garlic and onion, stirring, until onion softens. Add tomato, paprika and thyme. Cook, stirring, for 1 min, or until tomato just softens.
- Add stock and piri-piri sauce; bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for 10 mins, or until sauce thickens slightly.
- Remove potatoes from oven. Reduce oven temperature to 350u0b0F. Pour sauce over potatoes and bake, uncovered, for 20 mins, or until potatoes are tender. Serve sprinkled with parsley.
