Chicken Gumbo
- 2 1/2 to 3 lb. chicken breast
- 8 c. water
- 3/4 c. chopped onion
- 1/4 c. chopped celery
- 1 large can tomatoes
- 10 oz. okra
- 1/2 c. uncooked rice
- celery tops, chopped
- 2 1/2 tsp. salt
- 1 tsp. pepper
- 1 small pkg. mixed vegetables
- 1 (10 oz.) pkg. lima beans
- 1 (10 oz.) pkg. corn
- seasonings of choice (optional)
- Place chicken in large pot with water and celery tops.
- Boil until chicken is tender.
- Remove chicken and set aside until cool. Debone and chop chicken.
- Add vegetables, celery, onion, okra, corn, lima beans, mixed vegetables and tomatoes to broth; boil approximately 30 to 40 minutes stirring occasionally.
- Add chicken and rice and boil 30 minutes more.
- May add water if needed.
