Beef Skewers With Satay Noodles

  1. Place steak in a bowl. Add stir-fry sauce and oil and toss to coat. Stand for 5 mins to marinate. Drain. Thread steak on to 12 pre-soaked wooden skewers.
  2. Meanwhile, cook noodles according to package instructions. Drain and refresh under cold water. Transfer noodles to a large bowl. Add coleslaw mix, cilantro and peanuts. Toss to combine. Whisk satay sauce, lemon juice, fish sauce and 1/4 cup water in a small bowl. Add to noodle mixture and toss to combine.
  3. Preheat the broiler to high. Place skewers on a broiler tray. Broil for 2 mins each side, or until cooked. Serve skewers with satay noodles and garnished with cilantro.
