Date Muffins With Orange Syrup
- 1 1/3 cups white self-rising flour
- 1 cup whole wheat self-rising flour
- 1 cup sugar
- 8 tbsp (1 stick) butter, melted
- 1 cup plain yogurt
- 2 None eggs
- 1 tsp finely grated orange peel
- 1 1/2 cups coarsely chopped pitted dried dates
- None None FOR THE ORANGE SYRUP
- 1/2 cup sugar
- 2 tsp finely grated orange peel
- 1/4 cup orange juice
- Preheat the oven to 400u0b0F. Grease a 12-cup muffin pan.
- Sift flours and sugar into large bowl. Stir in combined butter, yogurt, eggs and orange peel. (Do not overmix; mixture should be lumpy.) Stir in dates. Spoon into muffin cups.
- Bake for 20 mins, or until toothpick inserted into center comes out clean.
- Meanwhile, for the orange syrup, place all ingredients with 1/4 cup water in small saucepan on high heat. Stir until sugar has dissolved. Bring to a boil. Reduce heat to low; simmer, uncovered, for 2 mins.
- Cool muffins in pan for 2 mins. Remove from pan to a wire rack set over a baking pan. Pierce muffins all over with skewer. Pour hot syrup over hot muffins.
