Veggie Veggie Chili

  1. In a large pot, saute onions, garlic, celery, peppers and mushrooms in olive oil.
  2. Add chopped jalapeno, chili powder, Tabasco and beer.
  3. Simmer about 15 minutes.
  4. Rinse all beans.
  5. Add to the pot.
  6. Stir to combine everything.
  7. Add the rest of the ingredients and simmer 1 hour.
  8. Serve with rice.
  9. Make this for a large group.
  10. It can be frozen.
