Piri Piri Chicken With Potato Rosti
- 12 None chicken tenders, trimmed
- 1 tbsp olive oil
- 1 tbsp piri piri seasoning
- 1 1/3 lbs potatoes, peeled
- 1 tsp salt
- None None Arugula leaves, cherry tomatoes, to serve
- Toss chicken with oil and piri piri seasoning in a large bowl. Set aside.
- Coarsely grate potatoes into a large bowl; stir in salt. Using hands, squeeze out excess liquid. Form evenly into 8 patties
- Heat a large skillet on medium heat. Spray with no stick cooking spray. Add 4 patties to pan, flattening with a spatula. Cook 3-4 mins each side, until golden brown and tender. Cover to keep warm. Repeat with remaining patties.
- Meanwhile, preheat a grill pan on high heat. Cook chicken 2-3 mins each side, until browned and cooked through.
- Serve chicken with rosti, arugula and cherry tomatoes.
