Chorizo Calzones

  1. Heat a large frying pan over medium-high heat. Cook chorizo for 1 min per side, or until browned. Drain on paper towels.
  2. To make the pizza dough, combine flour and a pinch of salt in a large bowl. Make a well in the center and add milk. Using a round-bladed knife, mix to form a soft dough. Turn out onto a lightly floured work surface and knead until smooth. Shape into a ball then divide into 4 equal portions.
  3. For the calzones, roll out each portion of dough into an 8 inch round. Arrange 2 slices of cheese over each round then top with chorizo, parsley and 2 slices of tomato. Fold dough in 1/2 to enclose filling and form a semicircle, pressing edges to seal. Sprinkle with cumin seeds.
  4. Working in batches, heat oil and butter in a small frying pan over medium-low heat. Cook calzones for 2 mins per side, or until golden brown and cooked through. Drain on paper towels then cut in 1/2.
  5. Serve calzones with mixed salad and lemon wedges.
