Caramelized Pancake Bites With Jam
- 6 None eggs, separated
- 1 tsp vanilla extract
- 6 tbsp sugar
- 2 cups flour
- 2 1/4 cups low-fat milk
- 3 1/2 tbsp butter, melted
- 4 tsp vegetable oil
- 4 tbsp powdered sugar
- None None jam, to serve
- For the batter, beat the egg yolks, vanilla extract, 2 tbsp sugar and a pinch of salt with an electric mixer until creamy. Beat in the flour in batches, alternating with the milk, until both are incorporated. Add the butter in a thin stream, stirring constantly. In a separate bowl, beat the egg whites until they form stiff peaks, then gently fold them into the egg yolk mixture.
- Heat 1 tsp oil in a non-stick frying pan. Pour in 1/4 of the batter and cook over low heat until golden brown on the bottom. Flip and cook until the other side is browned. Using 2 wooden spoons, tear into bite-sized pieces. Sprinkle with 1 tbsp powdered sugar and caramelize briefly, turning. Remove from the pan and keep warm. Repeat with the remaining oil and batter. Serve with jam.
