Lamb With Basil Stuffing

- 2 slices bacon, chopped
- 2/3 cup fresh breadcrumbs
- 1/4 cup fresh basil, chopped
- 3 tbsp fresh parsley, chopped
- 2 tbsp pine nuts, toasted
- 2 cloves garlic, minced
- 1/2 None orange, zested
- 1/2 tsp cumin seeds
- 2 lb lamb loin, butterflied, trimmed
- 1 tbsp oil
- None None Glaze
- 1/2 cup orange juice
- 2 tbsp maple syrup
- None None salad, to serve
- Preheat oven to 350u0b0F.
- In a medium frying pan, cook bacon over high heat for 3-4 mins, until crisp. Mix with breadcrumbs, herbs, pine nuts, garlic, orange zest and cumin. Coat lamb in mixture, roll up and secure with butcher's twine.
- In a large frying pan, heat oil over high heat. Sear lamb for 8-10 mins, until browned on all sides. Transfer to a rack in a roasting pan. Season. Roast for 20-25 mins, or until cooked to your liking. Let rest, covered, for 15 mins. Slice.
- Meanwhile, to make the glaze, heat orange juice and maple syrup over low heat until slightly reduced.
- Serve lamb with glaze and salad.
