Roasted Cod With Vegetable Stir Fry
- 4 (7 oz) cod loin fillets
- None None small bunch fresh cilantro
- 4 cloves garlic, peeled and thinly sliced
- 2 tbsp olive oil
- None None Stir Fry
- 1 tbsp vegetable oil
- 1 None large red onion, peeled and sliced into rings
- 4 cups broccoli florets
- 2 None red peppers, seeded and cut into thin strips
- 1 tbsp soy sauce
- None None juice of 1 lime
- Preheat the oven to 400F. Line a roasting pan with foil. Using a small, sharp knife, make 8 small incisions in each cod fillet. Push 2 cilantro leaves and a slice of garlic into each incision.
- Season the cod fillets with plenty of salt and freshly ground black pepper. Place in the roasting pan drizzle with olive oil. Roast for 15 mins until the fish flakes easily.
- For the stir fry vegetables, heat vegetable oil in a wok or large frying pan. Add the onion, broccoli and peppers and stir-fry over a high heat for 4-5 mins until lightly browned. Add soy sauce and lime juice and mix well. Transfer the cod to serving plates. Spoon over the cooking juices. Serve with the vegetables.
