Traditional Caramel Chicken
- 2 tbsp fish sauce
- 1/2 cup sugar
- 2 cloves garlic, thinly sliced
- 1 1/3 lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 7 oz snow peas, trimmed and halved diagonally
- 1 None red onion, cut into wedges
- 1 None birdseye chili pepper, sliced, to serve
- None None Steamed rice, to serve
- Mix fish sauce and 1/2 cup water in a small bowl. Place sugar and 1/3 cup water in a large skillet on medium heat; cook, swirling occasionally, until sugar dissolves.
- Bring to a boil. Cook, swirling occasionally, for 5-8 mins, until a deep amber color. Remove from heat. Slowly add fish sauce mixture. Swirl pan to combine.
- Add garlic and chicken. Season well with freshly ground pepper. Cook, stirring occasionally, for 4-5 mins, until chicken is almost cooked through.
- Add snow peas and onion. Cook for another 1-2 mins, until chicken is cooked through and sauce thickens. Serve with sliced chili pepper and rice.
