Gluten Free Carrot Cake With Orange Icing

  1. Preheat oven to 325u0b0F. Grease and line a deep 8 inch cake pan with parchment paper.
  2. In a large bowl, sift flour, cornstarch, baking powder, baking soda and spice mix together. Stir in sugar, carrots and walnuts. Stir in oil, sour cream and eggs until smooth. Transfer to prepared pan and bake for 1 hour, or until a skewer inserted in the center comes out clean.
  3. Meanwhile, to make the orange icing, beat cream cheese and orange zest until light and fluffy. Gradually beat in powdered sugar until smooth.
  4. Let cake cool for 10 mins then turn out onto a wire rack to cool completely. Spread orange icing over cake before serving.
