Bean And Corn Soup With Sausage Meatballs
- 100 ml canned sweetcorn
- 40 g cherry tomatoes, halved
- 1 None small onion, peeled and finely chopped
- 1 clove garlic, peeled and finely chopped
- 1 None small red chili pepper, seeded and cut into fine rings
- 1 tsp oil
- 300 ml vegetable stock
- 30 g frozen green beans
- 50 g coarse sausage, skinned
- 1 tbsp lemon juice
- Cook beans in boiling salted water for 7 mins. Drain.
- Meanwhile, heat oil in a frying pan. Saute onion, garlic and chili. Add stock and corn and simmer for 10 mins. Puree then pass through a fine mesh strainer. Add beans, tomatoes, lemon juice and season. In a separate pan, sear the meatballs until browned. Add to the soup and cook for 2-3 mins. Serve.
