Bean And Corn Soup With Sausage Meatballs

  1. Cook beans in boiling salted water for 7 mins. Drain.
  2. Meanwhile, heat oil in a frying pan. Saute onion, garlic and chili. Add stock and corn and simmer for 10 mins. Puree then pass through a fine mesh strainer. Add beans, tomatoes, lemon juice and season. In a separate pan, sear the meatballs until browned. Add to the soup and cook for 2-3 mins. Serve.
