Cauliflower Dhal
- 1 tbsp vegetable oil
- 1 None Spanish onion, finely chopped
- 1/2 cup fresh ginger, peeled, grated
- 2 cloves garlic, minced
- 1 (2 1/4 lb) cauliflower, cut into florets
- 1/2 tbsp ground cumin
- 1/2 tbsp ground coriander
- 10.5 oz red lentils
- 4 cups vegetable stock
- 1 (13.5 oz) can diced tomatoes
- 1/4 cup fresh cilantro leaves
- 2/3 cup mango chutney
- 1 cup yogurt
- None None naan bread, to serve (optional)
- Heat oil in a large saucepan over medium heat. Cook onion, ginger and garlic until onion softens. Add cauliflower and spices. Cook, stirring, until fragrant.
- Add lentils, stock and tomatoes. Bring to a boil then reduce heat and simmer, stirring occasionally, for 20 mins, or until lentils are tender.
- Sprinkle with cilantro. Serve with chutney, yogurt and naan, if desired.
