Cranberry Pork Chops
- 4 (3/4-inch thick) pork chops
- 1 Tbsp. vegetable oil
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 (8 oz.) can pineapple slices, undrained
- 1/2 c. hot water
- 1/2 c. whole berry cranberry sauce
- 1 chicken flavored bouillon cube
- 2 Tbsp. brown sugar
- 2 Tbsp. white vinegar
- 1 sweet red or green pepper, cut into rings
- 2 Tbsp. cornstarch
- 2 Tbsp. water
- Brown pork chops in oil in a large skillet; drain pan drippings.
- Sprinkle pork chops with salt and pepper.
- Drain pineapple, reserving juice.
- Set pineapple aside.
- Combine juice, 1/2 cup hot water and next 4 ingredients.
- Pour over pork chops. Cover and simmer for 20 minutes.
- Place pineapple slices and pepper rings on top of pork chops; cover and simmer an additional 10 minutes.
- Transfer chops, pineapple and pepper rings to a serving platter, reserving the pan drippings.
